Chef Justin says ... Do Christmas, Florida style...

Florida has a unique makeup of many different cultures; Hispanic, Caribbean and Sothern flavours are very prominent in professional and home kitchens around the State. The holiday cooking tradition that holds true for everyone is not a particular flavour profile or series of recipes. Instead it is the infusion of Florida grown and harvested ingredients. This works perfectly with any kind of ethnic cooking due to the large variety of Florida grown fruit, vegetables and seafood that is available. The most current trend is to replace some of the more traditional fare for a more fresh seafood influenced menu. Florida seafood is a great way to add a new dimension to the classic festive meal.
