Chef Justin says ... Do Christmas, Florida style...

Florida has a unique makeup of many different cultures; Hispanic, Caribbean and Sothern flavours are very prominent in professional and home kitchens around the State. The holiday cooking tradition that holds true for everyone is not a particular flavour profile or series of recipes. Instead it is the infusion of Florida grown and harvested ingredients. This works perfectly with any kind of ethnic cooking due to the large variety of Florida grown fruit, vegetables and seafood that is available. The most current trend is to replace some of the more traditional fare for a more fresh seafood influenced menu. Florida seafood is a great way to add a new dimension to the classic festive meal.

If you, or your clients, happen to be in the Sunshine State celebrating Christmas this year then locally produced and sourced, fresh from the farm ingredients can be found at one of the 12 State Farmers Markets where more than 25 million units of fresh fruits and vegetables, valued at more than 150million, are sold annually.

It's no secret that Florida is a haven for fresh seafood, with more than 80 types of seafood harvested off Florida's coasts. When shopping or dining out locally, be sure to ask for "Fresh from Florida" seafood, or buy your own to cook in the comfort of your holiday home from one of the many Florida Seafood Retail Markets dotted across the State.

If you are staying in the UK this festive season, fear not as Chef Justin has kindly suggested a Florida festive menu to whet your appetite and inspire you to recreate your own Florida-style Christmas in the confides of your own home. Click on each item for ingredients and cooking instructions.
